Oatmeal Raisin Cookies! These are so good but you definitely need the maple to get that traditional oatmeal raisin cookie tastes so don’t skimp on that and use some other syrup! The cookies are chewy and the texture is perfect, you can even add some roasted walnuts in it if you wanted to.

Oatmeal Raisin Cookies
- 1 ½ cups rolled oats
- ¾ cup flour
- ¾ cup raisins
- ½ cup dark brown sugar
- ½ cup vegan butter
- ¼ cup apple sauce
- 2 tablespoons flax seeds (optional)
- 2 tablespoons pure maple syrup (has to be maple!)
- 1 teaspoon pure vanilla extract
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon baking soda
Directions
Preheat your oven to 350°F.
Beat together the sugar and butter until light and fluffy and then beat in the applesauce and vanilla extract.
Sift together the flour, cinnamon, nutmeg and baking soda and then add it slowly to the wet ingredients until well combined. Use a spatula to mix in the oats, flax seeds and raisins.
Let the dough chill for 5-10 minutes to make it easier to work with.
Using a tablespoon measure, spoon the cookies on a parchment lined baking sheet, two inches apart.
Bake 10 – 12 minutes or until the edges start to turn a golden brown.
*Tip: Rotate your baking sheet halfway through cooking to ensure they bake evenly.
